Watermelon Tomato Salad




Although summer is almost gone, watermelons are still in the market. Everyone loves watermelon, who doesn´t? It almost quenches our thirst especially on a hot day...

But, what else can we make out of watermelon?



Well, a tart that I always bake for dinner for which I used fruits gave me a thought... Why not make a salad out of  watermelon?



So, here is that idea, proven to be  really yummy and delicious!

Watermelon Tomato Salad

What you need for 2 persons:

2 cups of thinly sliced seeded watermelon
2 medium tomatoes, quartered
fresh basil leaves cut into strips 
 few whole basil leaves  for topping
 spring onions cut into strips
1 small red onions cut thinly into rings
6 slices of smoked ham or Prosciutto


For the vinaigrette:

2 tbsp  table vinegar,
2 tbsp dark aceto balsamico 
1 tsp worcester sauce
4 tbsp olive oil 
1 tbsp sugar  (or 1 tbsp stevia powder - sugar substitute)
salt & pepper
1 tsp ground garlic (optional)  






Preparation

 Arrange the watermelon slices and the quartered tomatoes as well as the pieces of prosciutto  in a platter  alternately so that they´re well distributed in place topping them with strips of spring onions, red onion rings, strips of basil.. You can also prepare 2 separate plates and divide the ingredients as well as the vinaigrette for each share.

Mix the vinaigrette ingredients well, adjusting the seasoning according to your taste... The taste should be a bit of sweet and sour... then, distribute the vinaigrette by means of a spoon all over the platter and garnish the top with whole basil leaves...
